Natural Brazil and Indonesia

This month we have two Natural coffees. First up we have a lovely natural from Brazil that offers a flavour profile to challenge perceptions of what many consider to be 'typical' Brazil. Through carefully hand picking only the perfect ripe cherries, they are able to showcase a beautifully clean and sweet cup. This has been one our favourite Brazils in a long while. The second coffee is from Indonesia demonstrating how inoculation can result in some incredible flavours. This specific lot is processed by a group called TUANG COFFEE from East Nusa Tenggara. Aside from the last 2-3 years, we have not had many Brazils and nearly no Indonesian coffes offered in our Roastery Select offerings as we usually look for coffees with more fruit-forward character. Both these coffees showcase how intentionality in farming and processing practices can result in such beautiful coffees!


Fazenda Ponte

"Fazenda Ponte is bordered to the south and east by the Rio de Contas, in Vieira. Since 2015, Rodolfo has worked on producing specialty coffees. Rodolfo started the search for knowledge, participating in events and exchanging information with other more experienced producers in the municipality.

This batch specifically went through a different process, starting with manual harvesting, only the cherry coffees, separated the floats and passed them on the scavenging table to remove any greens that may have remained in the batch, then a light controlled dry fermentation was carried out and soon after drying on a covered cement terrace."

"CATUR Coffee is a collaborative effort to improve the landscape of coffee production with Indonesia... utilizing different strains of yeast to derive flavour within the cup. There are four different flavour categories being created throughout the six processing facilities, BUMI, SENJA, PUCUK and KAMALA."

"KAMALA means lotus as well as pale red in Sanskrit. This is our take on what Indonesian coffees could be under experimental yet directed post-harvest techniques. KAMALA offers different arrays of fruity, boozy and out of this world flavours! We achieved this through the use of mostly anaerobic natural technique as well as trial-based inoculants." - Mikael Jasin
