Small but mighty
A relatively small farm at 1 hectare (and relatively new, founded in 2012), producer Salvidar Bazan has been looking to grow his specialty coffee offerings to fund his family's education.
This coffee is a washed variety of Bourbon, Catimor, Caturra and Catuai. A fermentation time of 19-30 hours, and drying time of 15 days. Introduced to us by Collaborative Coffee Source.

Quality from a Co-op
The second coffee in our box is from a co-op located in Cajamarca, Peru. Santuario Co-op has been helping small holder farms in the Chirinos district upgrade their processes, from farm renovations to process control and education.
The coffee is a washed variety of Caturra, Bourbon and Typica. A wet fermentation time of 15-36 hours, and drying time of 6-15 days on patio and use of dryers. Introduced to us by Red Fox Coffee Merchants.
