This is our first year working with Edelweiss Estate Coffee and we are excited to share their work! In past seasons they have had successes in experimenting with anaerobic and special processes. This year they have pushed for a focus on developing more consistent and repeatable processing protocols specific for the varieties they produce.

“So this year we invited an old friend from Chile, Marcelo Pereira to join the team to lead and hone our processing side. With this came new ideas and new thinking. We started this year with the goal of how to try to manage our fermentation better and to understand the key indicators that would lead to fermentation and more repeatable fermentation / sustainable flavour profiles. In this way we could standardize all our processes and then lean into the areas of fermentation that would be more specific to each varietal. One of the key points was not to process to produce a gimmick, but to process the specific varietal to allow the varietal to shine through and bring the varietal to the best that it could be.”
SL28 is a variety that has gained wide renown since it’s introduction from Scott Agricultural Laboratories, now called National Agricultural Laboratories (NARL) situated at Kabete, Kenya. As a result its lineage is often considered to originate from Kenya. However, from historical documents its heritage is derived from a parental seed that was first found in Tanzania and brought to Scott Labs for selective breeding due to its drought resistance.
