A very recently identified variety, bourbon aji is named after the aji chili pepper due to its distictive, mild pepper-like, flavour characteristics. Further genetic testing has indicated that it is not directly descended from the classic bourbon but rather an variety of Ethiopian origin.
This coffee is an anaerobic natural processed lot that underwent multi-stage fermentations. The cherries were allowed to oxidize for 18 hours before the first round of anaerobic fermentation for 30 hours. Afterwards, the coffee is moved back into an aerobic environment to further oxidize for 28 hours before another 30 hour round of anaerobic fermentation. For the last wet process, the cherries are immersed in a mixture of water and mossto for 18 hours before proceeding to drying. The resulting coffee is layered, complex and with just the right amount of 'fun funk' to keep things interesting.
