Originally a mountaineer, Pepe decided to settle down to be more in touch with the land and fell in love with coffee at Finca Soledad. Pepe worked to replant the land and reintroduce more trees to restore the forest. Finca Soledad now produces mainly sidra and typica mejorada with some smaller lots of geisha.
Oxidator washed is a process developed and coined by Pepe. The coffee was first fermented for 48 hours in an open air tank to allow oxidation to occur. Cherries are then pulped and allowed to ferment another 48 hours in mucilage before being fully washed and dried.
