El Paraiso Lychee
A recent arrival direct by air from El Paraiso. This is a double anaerobic fermentation caturra.
Whole cherries are first washed, followed by whole cherry anaerobic fermentation for 48 hours. Then the cherries are pulped and undergo second stage anaerobic fermentation in mucilage for 96 hours. After fermentation, coffee is washed with thermal shock (high temperature washing, followed by cold water). Final phase of controlled drying for 34 hours.

A recent arrival direct by air from El Paraiso. This is a special two stage fermentation pink bourbon.
Whole cherries are first washed, followed by the first phase of fermentation - whole cherry aerobic fermentation. After 42 hours, whole cherries undergo a second phase as anaerobic fermentation. After 72 hours in second phase, cherries are pulped, and control dried for 26 hours.

A special prep washed day lot of varieties 74158, 74165, 74112, 74110, 7440 from washing station Demeka Becha in Becha Village in the Sidama region of Ethiopia.
Sourced by Catalyst Coffee, this is a special day lot - a very hands on initiative by Catalyst to tag and track coffees, from harvest of cherries, all the way down to export dry mill. In this particular case, 29 bags of (parchment) coffee were obtained from an isolated fermentation tank from a single harvest day (Feb 11, 2020) - no mixing from previous harvest days, no fermentation batching, and then tracking all the way down to green sacks from dry milling.

Fazenda Serrinha is the very first farm from producer Jose Maria de Oliveira, and is the neighbouring farm to Santa Luzia. Everything on the farm, Jose has constructed with his bare hands, including the very first light post on the property. The main house on the farm is located on Fazenda Serrinha where Jose Maria and his family resides. The farm is home to the drying patios, raised beds, wet mill, silos, orchard, garden, and horse stables used for cultivating the coffees.

El Paraiso Eco-Enigma
This is a recent arrival direct from El Paraiso. The coffee is Caturra and Castillo from Bolivar in Cauca Colombia, where producer Diego Samuel Bermudez Tapia was born.
Eco-Enigma is a process from El Paraiso that is applied to coffees from neighbouring producers - in this case, from Diego's place of birth. Enigma is a closed circuit air recirculation and temperature controlled system. It uses condensation and recirculation to minimize the environmental impact of processing while creating replicable conditions to dry coffee to between 10-11.5% humidity regardless of climate factors.
This coffee is joining our 'seasonal core' selection, along with Fazenda Serrinha, and is profiled as a comfortable filter and espresso.
