Recently arrived by air, this Geisha was specially produced for us by Diego. It is named after Diego's eldest daughter Luna. The colour of the label is based on her favourite colour.

With a vow of secrecy on the process, we can simply say it is a two-stage fermentation washed geisha.

This coffee is extraordinary.

Brought in by air, this is a double anaerobic fermentation Geisha variety, named after Diego's youngest daughter Letty.

This coffee requires some patience. It's true colours start to show 7-8 days after roast.

Momoto Lovely

Named after a beautiful and colourful bird in Panama ("Momoto," or "Motmot" in English), Finca Momoto is relatively new but founded by coffee producing veterans. Specializing in specialty microlots, Momoto has produced some quality varieties such as Geisha, Maragogype, Pacamara, Maracaturra and even some varieties brought in from Africa.

Momoto named this particular natural processed geisha as "Lovely." Luis describes it: "Lovely because I believe anyone can fall in love with it. Very balanced with sweet fruits and floral in flavor and aromas plus very nice acidity and great mouth feel. Lovely was our last picked lot and it was harvested by late March. The dehumidifiers were stopped by then and so we sundried it on the raised beds for about 6 weeks. Because our winter started in the second week of April, and it was challenging to dry it sooner."

Lots of hard work by the Momoto team, but it shows through in the cup. A Lovely piece of work.

A 200hr fermentation natural process Castillo from Finca Maracay in Quindio Colombia.

Luz and her husband Jairo (also the pair behind Finca Santa Monica) have been producing some wild coffees with various processing experiments. We brought in this coffee along with several experimental process coffees from Cofinet, including the Finca Maracay White Wine Fermentation Natural Castillo (which was a Roastery Select subscription exclusive for July).

A special prep washed day lot of varieties 74158, 74165, 74112, 74110, 7440 from washing station Demeka Becha in Becha Village in the Sidama region of Ethiopia. We're honoured to have this coffee for a second year in a row.

Sourced by Catalyst Coffee, this is a special day lot - a very hands on initiative by Catalyst to tag and track coffees, from harvest of cherries, all the way down to export dry mill. Parchment coffee is isolated in a fermentation tank from a single harvest day - no mixing from previous harvest days, no fermentation batching, and then tracking all the way down to green sacks from dry milling.

Serrinha

Fazenda Serrinha is the very first farm from producer Jose Maria de Oliveira, and is the neighbouring farm to Santa Luzia. Everything on the farm, Jose has constructed with his bare hands, including the very first light post on the property. The main house on the farm is located on Fazenda Serrinha where Jose Maria and his family resides. The farm is home to the drying patios, raised beds, wet mill, silos, orchard, garden, and horse stables used for cultivating the coffees.
