Yambamine Natural

We continue to be enamored by Sidra varieties coming out of Ecuador. The butterscotch-like sweetness is comforting and nostalgic. Then combine this sweet variety with special preparation and it makes for some exciting flavours, like this "light CM" natural processed Sidra from Yambamine.

After harvest, coffee underwent 3 days of fermentation in a tank with CO2 injection, followed by drying for a week on African beds and finished for 3 more weeks under canopy.

Campo Hermoso Sidra

An agro-industrial engineer. A Q-Grader. A Q-processing expert. An international coffee processing consultant. A head COE Colombia Competition Judge. And a farmer. All part of the many roles that producer Edwin Norena plays to create high quality coffee.

Combining his thirst for knowledge with 3 generations of coffee producing experience has elevated the prestige at Finca Campo Hermoso, and applying that to experimental processing like this double carbonic maceration Sidra Bourbon.

Cherries are handpicked at 17 brix, washed, and sealed inside fermentation tanks for 72 hours (as the first phase). Coffee is then pulped and undergoes a second fermentation for 96 hours along with the 'mossto' (the coffee fruit that was previously pulped). The coffee is then patio dried for 22 days.

Rui Ruiru Wet Mill

Rui Ruiru is a washing station that was revived in 2020. The name in the local language means "black river." The washing station was in operation from 1963 to 2014 but had to stop its operations as farmers had stopped bringing in cherries due to non-payment. Over the years, the mill was left unattended with machinery rusting and vegetation taking over. In late 2020 Jamii Coffee undertook the project to revive the mill. They have worked hard to rebuild trust with local farmers to have preharvest contracts and offer direct price negotiation. After doing cost of production analysis with farmers they multiply the cost by 150% to determine the base price starting point. This ensures that the farmer is profitable at the farm level.

Shyira CWS

Situated close to the famed Virunga Mountain (where you'll find the elusive Silverback Gorilla), the Shyira CWS washing station is relatively small with about 50 raised drying beds, though is the highest located in Rwanda.

Forward is one of the first international buyers to ever visit Shyira, witnessing its development and progress over the years. "In 2020 there was a significant mudslide that affected many of the near 2000 farmers who contribute their cherry to Shyira CWS. The purchase of this coffee, and a premium paid this season, has supported the re-development of their communities".

A coffee from the Worka Chelbessa community, the washing station is located in the Gedeb District which is part of the larger Gedeo Zone. Coffee from the Gedeo Zone is typically referred to as Yirgacheffe even though Yirgacheffe is also a town and a district within the Gedeo Zone. Worka Chelbesa has been producing spectacular coffees and this one is no exception!
