El Vergel Estate has been producing a variety of coffees and experimenting with new and innovative processing techniques. This new arrival is a custom Koji processed Pink Bourbon commissioned just for Hatch.

Whole cherries underwent initial fermentation for 48 hours, followed by the addition of Koji for 3 days. Coffee was then depulped and inoculated with the addition of Koji for a final fermentation of 2 days; then washed and dried.

Update: due to an unintentional costing error the initial release of this coffee had the price at $50. While we were happy paying an upcharge for this special edition koji fermentation just for us, El Vergel was gracious to provide a credit. So we will be passing along the new price, and we will be refunding the difference to customers that purchased the coffee online and in-store.
