Rare Origin

Finca Chelin

An interesting variety from an innovative producer.

This is a black honey carbonic maceration coffee. Coffee was placed in a closed tank for 48 hours following carbonic maceration process. Commercial yeasts and cold water was added to regulate microbe activity. After depulping, the coffee was dried in mucilage (honey process) over four weeks in a multi-staged drying process.

We were drawn to this coffee on a recent cupping table from samples provided by La Nacional (a special thanks to them for introducing these coffees to us). After learning more about producer Enrique Lopez, we've grown more fond of this coffee and of Finca Chelin - they take experimental processing to another level, having developed over 20 different post-harvest processes. Finca Chelin is also a carbon neutral operation.
