From enterprising producers Rigoberto and Luis Herrera (from the famed group Cafe Granja La Esperanza), this special Natural Sudan Rume is from one of their umbrella farms Las Margaritas. Here they grow various varieties, from classics such as Caturra, Colombia, Tabi, to exotics like Geisha, Sidra, SL28 and the super-difficult-to-cultivate Sudan Rume (yields are low and susceptible to disease).

Our second year with this highly unique 720 hour (30 day) fermentation processed Geisha from El Paraiso in Colombia.

A mellower version compared to last season, this coffee is smooth yet vibrant and intense. This coffee (along with Luna and Letty, and other special prep varieties from El Paraiso) showcase the full range of possibilities of intentional processing.

Yambamine Sidra

Our second season with this special Yambamine Sidra.

This is a double anaerobic "red washed" processed coffee. CO2 was placed into containers with fresh harvested cherries for an oxygen-free fermentation for 8 days. After the first phase of anaerobic fermentation, the coffee was pulped and caused the mucilage to turn red due to the pectin component. With this red mucilage attached, the second phase anaerobic fermentation began. The process was maintained at a pH of 3.7 or higher for 4-5 days. The coffee was then washed and dried.
