Cerro Azul was the first farm in Colombia to produce a Geisha variety, and to this day solely produces Geisha at this farm. Their coffees have frequently been the supporting actors for many baristas on the world stage.

“Each cherry is handpicked at the peak of ripeness, ensuring only the finest beans move forward. After a delicate flotation process to remove lighter cherries, we monitor the natural sugars before beginning a layered fermentation journey. For 14 hours, the cherries open up their flavours in open tanks. Next, they’re taken to a sealed environment for an 18-hour, oxygen-free fermentation, deepening their profile. Finally, they’re pulped and given a refreshing aerobic fermentation for 24 more hours, ensuring that each bean carries an unmatched depth and complexity.
The coffee is then dried in a mechanical dryer at a temperature of 37°C. It is then stored in a temperature controlled warehouse at a temperature between 18°C and 19°C.”
