Cerro Azul was the first farm in Colombia to produce a Geisha variety, and to this day solely produces Geisha at this farm. Their coffees have frequently been the supporting actors for many baristas on the world stage.

“Our handpicked coffee cherries are chosen at the perfect ripeness, ensuring only the best beans make it through a delicate selection process. After being floated in water to remove any lower-density beans, the cherries undergo a unique fermentation process that brings out vibrant flavors. First, they’re left to naturally ferment for 14 hours in open tanks, followed by an 18-hour closed-tank double fermentation that deepens their taste. Finally, after pulping, the cherries enter a 72-hour aerobic fermentation for a truly refined finish.
To lock in the intense flavors developed during fermentation, the beans are carefully dried in mechanical driers for 3 to 5 days at a gentle 38°C. This controlled drying method preserves the essence of each bean, allowing every sip to capture the richness of the process.”
