Potosi is one of the farms owned by the Herrera family that to produce traditional Colombian varieties, such as caturra, colombia, tabi as well as geisha. Their coffees have frequently been the supporting actors for many baristas on the world stage.
Cherries were fermented for 24 hours in anaerobic tanks, then de-pulped, and fermented in anaerobic tanks for 24 hours. After the second anaerobic fermentation, the coffee was dried in mechanical dryers for 144 hours at a temperature between 38°-39° C.
