Founded in 2016 when producer José Luis Chevas was just 18 years old, Chevas Estate builds upon a rich family legacy. His grandfather, Luis Víctor Chevas, first began farming potatoes and onions before turning his focus to coffee in 1996. Inspired by his grandfather’s dedication, José entered the coffee world to pursue high-altitude Geisha cultivation in El Salto, Boquete, Panama. By utilizing innovative processing techniques—such as cold-room and dark-room drying to optimize cup profile, complexity, and final flavour delivery.
Their innovative approach gained world-class recognition, securing a top-10 placement at the 2024 Best of Panama (BoP):

ABOUT THE PROCESS:
Sourced from the Choclo lot, this Geisha begins with meticulous cherry selection, using water flotation to isolate only high-density, fully ripe fruit. Then, the cherries undergo a controlled 2-day ambient oxidation at 20°C–26°C, awakening native microorganisms to unlock deep aromatic complexity. To preserve purity and structure, the coffee is then transferred to the climate-controlled Dark Room for a extended, slow-drying process.
