As many of you have noticed, we are fans of Isidro Castillo’s work with NOSCOFFEES. This particular lot is a fun coferment with mango and peach done in a unique and interesting way.


The coffee is allowed to ferment in whole cherry for the initial 48 hours in a sealed low-oxygen container. During this phase as the coffee releases ‘juices’ (aka. must/mosto) it is collected and removed. The coffee cherries at this point move to begin drying on raised beds.


The liquid must that was collected in the first stage is then combined with blended mangoes (80%) and peaches (20%) to ferment separately for 48 hours. Fruit used in this process are excess misfits gathered from farms that are considered not suitable for sale.


Once the coffee cherries have reached approximately 30% moisture content they are reintroduced to the fermented fruit-must mixture to be fully submerged. The tanks are sealed in low-oxygen conditions for a further 96 hours for more microbial development and fermentation. Afterwards the cherries are moved back to drying beds to complete the drying process to a typical 10-12% moisture.
