Another offering from El Paraiso that is a departure from their ‘usual’ style of special fermentations.
Carefully selected cherries first undergo an ozone disinfection process. After depulping, they undergo 24–36 hours of controlled anaerobic fermentation with Lactobacillus to enhance sweetness and smoothness. A double thermal wash is then applied, starting with immersion in hot water at 48°C and followed by a cold water shock at 4°C to preserve delicate aromatic compounds. Finally, the coffee is dried in a dehumidifier for 30–40 hours to ensure consistent moisture control.
