Originally a mountaineer, Pepe decided to settle down to be more in touch with the land and fell in love with coffee at Finca Soledad. Pepe worked to replant the land and reintroduce more trees to restore the forest. Finca Soledad now produces mainly sidra and typica mejorada with some smaller lots of geisha.
Sydra has quickly become a popular variety in recent years due to its fantastic cup profile. Indeed amongst our team it has become one of our favourites and often garners some fanfare and attention when we cup samples of this variety.
This coffee started out with a 4 day fermentation. At this point ‘mossto’, a mixture of coffee fruit juices released from cherries during processing, is added and the coffee is allowed to ferment for an additional 2 days. Finally the coffee is carefully dried over a period of 35-45 days. ‘Wave’ references Pepe’s approach to embracing the cyclical changes of nature so variables such as temperature and humidity are allowed to fluctuate while being closely monitored to determine the changes in each step.
