This process from Hachi offers several advantages. The intact cherry skin acts as a semi-permeable barrier, allowing a slow integration of the enzyme solution while retaining the coffee’s natural precursors within the fruit. This approach creates a stable environment for a low stress fermentation and allows for the targeted breakdown of fruit pectin and complex sugars. After this carefully timed phase, the cherries are depulped and washed to stop the microbial activity at the peak aromatic development to prevent over-fermentation and preserve the desired flavor profile.
The coffee is then moved to a dark-room for drying, away from UV light and oxidation risk. The result is a cup profile marked by refined fruit clarity, clean acidity, and well-integrated body, without the heavy-handed influence often associated with long cherry fermentations.
