An immersive sensory masterclass mapping the interaction between water minerals and processing methods.
Water is 98% of your cup, making it the ultimate lens through which coffee is perceived. In this highly practical sensory workshop, we move past the theory of water chemistry and dive directly into how specific mineral ions—like Magnesium, Calcium, and Bicarbonate—alter your perception of acidity, body, and balance.
Using APAX LAB Mineral Concentrates, we will systematically manipulate the water profile of three distinct processing methods to map exactly how minerals highlight or mute different flavor compounds.
The Tasting Matrix
We will cup 3 sets of coffee across 5 distinct APAX LAB water profiles, evaluating a total of 15 unique sensory combinations:
The Washed Process: Focus on evaluating structural clarity, pristine acidity, and how minerals can either crisp up or completely flatten delicate origin characteristics.
The Natural Process: Focus on evaluating heavy fruit sweetness, complex sugars, and how water composition alters the integration of intense, body-driven flavors.
The Anaerobic Process: Focus on evaluating high-intensity lactic/acetic acidity, volatile aromatics, and using minerals to structuralize and clean up wild, experimental extractions.
What We’ll Cover
The Anatomy of an Ion: Understanding the real-world sensory effects of Magnesium (brightness), Calcium (structure/body), and Bicarbonates (alkalinity and acid smoothing).
Post-Extraction Seasoning: Mastering the technique of post-mineralization to rescue unbalanced extractions directly in the cup.
Processing vs. Mineral Synergy: Learning which mineral profiles naturally pair with specific processing styles (e.g., matching TONIK with bright washed coffees, or JAMM with high-body naturals).
Sensory Calibration: Developing a precise vocabulary to describe how water alters texture, dryness, astringency, and finish.
Workshops will be held at our roastery in Markham.
